Interestingly enough, I've never fenced epee, only foil. I've never done saber either, but that was because when I fenced (quite a few years ago) women were barred from saber. I always wanted to try it, though.

I tried it, asked for sabre, and got foil. Snerk.

When I was fencing, that was the only style women were allowed to do. :-/
I've only fenced foil myself. My fencing teachers (late '80s-early '90s) insisted that their students learn foil first and well, and then learn other weapons. (They had no gender-based restrictions on weapon choice, as I recall.) Haven't done it in years, and now I have messed-up shoulders and knees, but I miss it!
I miss it too and like you have knee and shoulder issues. Theoretically, I could learn to fence left-handed, since it's my right shoulder that's a problem, not the left, but I'd have to re-learn almost everything, so I'm not sure I'm up for starting from scratch. (Plus the knees would still be a problem, albeit somewhat less if I fence lefty rather than righty.)
